Today, I decided to detail the making of the apple pie! For me, this is the most technical pie of the CAP program. Besides, I find it representative of the "CAP syndrome." CAP syndrome is when you realize that the pastry that you thought you could do (after all, who doesn't know how to make an apple pie?) And well, in reality, you do not control it at all - according to the CAP criteria in all case. It was with this recipe that I realized like Plato that "all I know is that I know nothing" and that I really started to work on the program.



In reality, the apple pie is not that complicated, but it is made of a succession of hyper codified steps, which it is difficult to improvise if one does not know the procedure to follow. It is done either on shortcrust pastry or on the sweet dough (shortcrust cake is a little more traditional, so this is what I chose for this recipe, but the fresh money is better).

Ingredients

Pastry


  • 200 g flour
  • 100 g butter
  • 4 g salt
  • 1 egg yolk
  • 70 g of water

Garnish


  • 7 apples
  • 60 g sugar
  • QS cinnamon


Instructions

Pastry

Combine flour and salt. Add the butter and mix well to create a kind of sand.

Add the egg yolk and mix well, then add the water little by little. The dough should not be worked too much.

Form a 2 cm thick patty, film, and reserve in the fridge for at least 20 minutes.

Compote

Peel the apples carefully. Reserve 4 apples for garnish.

Cut the 3 remaining apples into large pieces and put them on low heat in a heavy-bottomed pan with the sugar, cinnamon, and a little water.

Keep an eye on the compote throughout the preparation. When the apples have melted, and you can mash them with a spatula, you can remove the pan from the heat and leave to cool.



Darkening the pie

Take out the dough and let it return to temperature for about 10 minutes.

Spread it over 2 mm thick and darken a pie circle. Chew the edges and chill for a few minutes.

Cutting apples

Take the 4 remaining apples, cut them in half and then into thin strips. Sort them roughly according to their size.

Mounting

Take the pie out of the fridge and spread the compote at the bottom. Arrange the apple strips, starting from the outside. This step is quite long and can take 15-20 minutes.

Sprinkle with sugar and arrange the strips of butter.

Bake at least 1 hour at 170 ° C.



THE COOKING

For cooking, note that the cooking of an apple pie is very long (1h-1h10). This is how the top will have beautifully colored. Once the pie is out of the oven, boil some neutral topping with water and brush the pie generously with the brush. And There you go!
