Ingredients:

  • 3 cups of fresh strawberries, sliced.
  • 3 cups of fresh rhubarb chopped.
  • 3 cups white sugar.
  • Medium cup pineapple or lemon juice.
  • 2 tablespoons of lemon peel.


The longest part of this recipe is preparing the rhubarb; I wanted to bring back memories of my childhood when I prepare plain homemade strawberry rhubarb recipes. After washing the rhubarb sticks, I peel them with a knife or peeler, no need to remove a big thickness. I reserve the peels, they can be used to make tangy rhubarb water. Then I cut the rhubarb into sections of a few centimeters and set it aside.

1- The first step. wash and hull the ripe strawberries. Split them in half or four.


2- Choose red stalks of raw rhubarb, wash, and chop them into tiny pieces to make them easier to cook.


3- In a large pot, pour the pieces of rhubarb and strawberry. Add the cups sugar, lemon juice, and peel.


4- Cover it with a plastic or aluminum lid and let macerate for a whole night.


5- In the morning we will find the mixture containing a liquid that resembles brown syrup.

6- After soaking, put the mixture in a saucepan over moderate heat and leave it until it begins to a full rolling boil and combines. Once this happens, start stirring it occasionally over a simmer.


7- Continue stirring separately but without leaving the kitchen


8- Remove foam or bubbles forming on the surface with a colander.

9- After about 30 minutes of cooking, try if the jam is set: pour the equivalent of a spoon on a flat surface and check that the jam is sticking. If it is too runny, cook it and increase the processing time for a few more min.

10- Sterilize the jam jars by boiling them in water to get rid of bacteria. Wipe them well with a clean cloth.


11- Once cooked, pour your jam into the jars. Immediately close the jars with the lids and turn them over to close them tightly (take a tea towel so as not to burn yourself).


12- After cooling completely, place your jars upright, away from light, or store them in the refrigerator.


13- After the canner, don't forget to write the production date on the jar.
