I hope you don’t hesitate to give it a go and make your Kataifi recipes. I assure you that they are much better than what you can find in a caterers, for example.


I made them to my liking, ie a crispy Kataifi on the top and soaked in syrup on the bottom (perfect match between these two textures). If you prefer a more melt-in-the-mouth Kataifi, then increase the amounts in the syrup recipe a bit to soak your cakes a little more.

Recipe for Kataifi pastry with walnuts and pistachios

Ingrédients / pour 8 personnes


  • 300 g environ de pâte à kadaif
  • 200 g de noix décortiquées
  • 100 g de pistaches émondées non salées, non grillées
  • 125 g d'amandes émondées
  • 60 g de sucre
  • 175 g de beurre à température ambiante
  • 4 cuillères à soupe d'eau de fleur d'oranger
  • 250 g de miel liquide (type miel d'acacia)
  • 1 cuillère à café de cannelle en poudre

Prepare the Kataifi stuffing


Put all your dried fruits (pistachios and walnuts) that you have previously shelled, in a food processor ... it is a bit long, but it is well worth it. Of course, you can buy nuts and pistachios that are already shelled (this will save you time). Be careful though, for pistachios, you must buy them unsalted.

Add the sugar and cinnamon.

Mix everything for a few seconds. You must get very coarse pieces. You shouldn't over-mix the Kataifi stuffing, or it won't hold inside your angel hair.

Reserve.

Making the Kataifi pastry


1 Start by spreading the Kataifi dough on your work surface. You have to be delicate because angel hair is very thin and brittle.

2 Part the angel hair so that you create bands 3 to 5 cm wide.

3 At the end of the angel hair, drop a large tablespoon of your dried fruit mixture.

4 Roll up the Kataifi simply by trapping the filling well. To do this, you need to make at least 3 turns of angel hair around your trim. Then cut the excess angel hair and repeat the operation until all your angel hair is exhausted.

5 Reserve them on your work plan.

Preparation of the sugar syrup and orange blossom


1 Pour 3 large glasses of powdered sugar, 1 large glass of water and half a glass of orange blossom water into a saucepan and mix well.

2 Bring everything to a boil and then remove it from the heat as soon as it becomes transparent.

3 Book.

Dressing and cooking


1 Preheat your oven to 180 ° C.

2 Take a large baking dish and butter it generously. Do not hesitate to leave a few pieces of butter at the bottom of the dish.

3 Place the kataifi that you have just made.

4 Bake for about 25 minutes.

5 As soon as they are golden brown, you can take your dish out of the oven.

Soaking of the Kataifi


1 Right out of the oven, sprinkle your Kataifi generously with your sugar and orange blossom syrup. You will hear cracklings, this is quite normal: it is that your Kataifi is "drinking" all the syrup you have just poured.

Here are your Kataifi are ready! All you have to do is taste them: warm or cold, you will see it is a delight.
