1. Put the butter, cream cheese and milk in a saucepan and heat everything. Separate the eggs, add the yolks, flour and cornstarch and mix everything into a smooth mass. Then beat the egg whites with the snow-capped sugar and slowly and gradually add them to the mixture in the saucepan. The mixture should be creamy, without bubbles.

2. Take 4 tablespoons of the mixture and pour it into 2 small containers. Pour the rest of the mixture into a cake pan that you have previously lined with baking paper. Make sure there are no bubbles. If this is the case, lightly tap the mould on the work surface and use the skewer to remove them.

3. Colour one of the two containers with powdered chocolate and the other with raw cocoa. This way you will get a light brown paste and a dark brown paste.

4. Pour each coloured dough into a pastry bag and now use the two colours to create a leopard pattern on the surface of the dough in the cake pan.

5. You now need a deep baking sheet. Fill it with water and put the cake pan in it. Preheat the oven to 120 ° C, in convection mode, and bake the cake for 20 minutes. Then raise the temperature to 150 ° C and bake the cake for another 15 minutes.

6. After 15 minutes of cooking, open the oven door, leave it open for about 10 seconds, then close it. Lower the oven temperature to 100 ° C. Bake the cake for another 40 minutes.

7. After 40 minutes, turn off the oven and let the cake cool in the open oven for 10 minutes.
